I think this weekend will consist of Lemon raspberry cupcakes, Hot fudge cupcakes, Andes mint cupcakes, breakfast cupcakes and maybe strawberry cupcakes

Oh the cupcakes!!! I need to make Irish car bomb cupcakes again. I also found a recipe for 100 grand cupcakes on Pinterest.

Dinner tonight: Take your favorite multigrain, whole wheat, or pretty much any bread other than white and lay two slices on the counter. Sprinkle a small amount of brown sugar over one slice (I mean, like 1/4 to 1/2 a teaspoon, maximum.) Cut two ripe apricots in half and remove the pits - smoosh the cut sides onto the brown sugar on the bread. On the other slice, spread a very, very small amount of honey - the purpose here is to make the bread sticky, not to do anything more - and put down a few slices of fresh mozzarella. Put the two halves together and grill (dry, don't butter this sandwich, you just want to heat everything up a little and make the bread crispy on the outside.) Even better if you have a press or can press down on the sandwich with a spatula while it grills.
To me, this sandwich tastes like summer.
(Be sure to use fresh mozzarella, not the kind in the block or "low-moisture" - I'm pretty sure those flavors wouldn't work like fresh mozzarella does.)

What is this madness? I have never tasted cheese and fruit before. Yes, I know I live under a rock- blame my parents for my lack of adventure, we ate the same stuff all the time. I had a hard time with fruit on a salad lol but I am sure this is tasty. I have learned to love so many new foods in my adult life! Now I am not around apricots that much would any other fruit pair well with this or does it have to be apricots?

You had me up to the mozzarella too. I would never think to mix mozzarella and apricots.
Now I've done bread, heirloom tomatoes, basil and mozzarella.

I haven't tried it with other fruits - the cheese and plums might well together but I can't picture plums and bread together. Part of the reason for apricots is that they are fleshy enough to stand up to bread and cheese and have their own texture. It might work with brie instead of fresh mozzarella, if you're not into super-juicy cheeses. I do like a good grilled brie-and-apple sandwich, though, so it might just be that talking. (And if you've done tomatoes and mozzarella, you've done fruit and cheese. Technically, tomatoes are a fruit.)
